CO2 HOP OIL

EMULSION

 

Purpose:

Provision of "dry hop" character post-fermentation.

Description:

Yellow, aqueous dispersion of hop oil prepared by the emulsification of CO2 Oil Rich Extract with food grade emulsifiers.

Analysis:

Nominal concentration of oil is 2,650 ppm (or 2,500 ppm minimum after taking into account analytical error). Also present in the emulsion will be small amounts of alpha and beta acids (the quantities are dependent upon the hop variety and its source). Oil composition will also be dependent upon the hop variety, time and conditions of hop storage since harvest.

The emulsion is free of microbiological contamination.

Packaging:

Generally in sterile 22.5, 40 or 50 litre stainless steel kegs. Smaller packaging is available to special order.

Product Use:

Metered into flowing beer post-fermentation, pre-filtration preferably between fermentation and racking back where yeast counts are below 0.5 x 106 cells per ml. Alternatively CO2 Hop Oil Emulsion may be added directly to casks of beer during or prior to filling and before addition of isinglass finings.

Addition rates of CO2 Hop Oil Emulsion will normally be in the range 0.5-2.0 ppm dependent upon the intensity of aroma and taste required and the characteristics of the base beer.

Storage:

Unopened containers can be stored for up to six months at 3-6° C, prior to use. Avoid storage of partly used containers since sterility may have been compromised.

Safety:

No known health hazard in normal use. Non toxic in normal use. If material comes into contact with skin, wash off with soap and water. In the case of eye contamination, irrigate with plenty of water. If symptoms persist, seek further medical attention as necessary. Spillages should be washed away with plenty of water.
