ISOMERISED HOP PELLETS
![]()
Purpose: |
More efficient provision of bitterness via addition to hot or boiling wort. Can be used to impart aroma. |
Description: |
Type 90 Pellets in which the alpha acids have been isomerised to iso-alpha acids by the action of heat in the presence of magnesium oxide. Free flowing cylindrical pellets with dimensions approximately 10mm - 15mm x 6 mm (length x diameter). Bulk density is approximately 500 kgm3 |
Analysis: |
Analysis of the pellet will be dependent upon the hop variety and its source. Guaranteed yield of total alpha acids (iso-alpha + alpha) during processing is >96%, by HPLC. The degree of isomerisation (iso-alpha / (iso-alpha + alpha)) will be >95%, by HPLC. |
Blending: |
Blends of different varieties (Subject to E.E.C. regulations) and/or growths can be produced according to Customer requirements. |
Packaging: |
Sealed under vacuum backflushed with inert gas (nitrogen or carbon dioxide) in laminated food grade polyethylene/metallised polyester pouches contained in cardboard boxes. The net weight of pellets is 20 kgs unless to special order. All packaging to conform to Customer specifications. |
Product Use: |
Direct replacement of cone hops, Type 90 Pellets and extracts in kettle. Requires only a short contact time (maximum 15 minutes) with hot or boiling wort for maximum bittering potential to be achieved, however can be boiled for up to 90minutes with no detrimental effect on bitterness utilisation. If a late hop aroma is desired, then an addition of pellets (isomerised or type 90) should be made just before cast or to the whirlpool. Generally used for 100% of kettle bittering requirements. Utilisations achieved with Isomerised Pellets will usually be 50%-70% higher than for Type 90 Pellets. |
Storage: |
The bittering potential of Isomerised Pellets is more stable than for normal Type 90 Pellets. Unopened packs of isomerised pellets can be stored for up to a year at 25 ° C without any significant loss of bittering potential. For maximum preservation of essential oils, however, storage temperatures should be as low as possible. Once opened, packs of Isomerised Pellets should be used as quickly as is practicable. |
Safety: |
No known health hazard in normal use. If dust is generated in use or during addition this may be a slight irritant to the eyes and respiratory system (in this case it is advisable to wear a dust mask). Hop powder is a combustible material. |
