ISOMERISED

KETTLE

EXTRACT (IKE)

Purpose:

More efficient provision of bitterness via addition to kettle as a 100% replacement for cone hops, Type 90 hop pellets or hop extract.

Description:

Viscous extract (mobile at 30-40° C) derived from carbon dioxide hop extract.

Alpha acids have been isomerised to iso-alpha acids (present as the free acid).

Analysis:

Dependent upon variety and extract origin.

 Iso-Alpha Acids (% w/w) 30 - 60

 Alpha Acids (% w/w) <2

 Beta Acids (% w/w) 15 - 35

 Iso-Alpha x 100(%)/ >96 (Iso-Alpha + Alpha)

 Essential Oil (ml/ 100g) <10

Packaging:

Sealed, lacquered (food grade) cans of 1 kilo nett weight, polyethylene containers, or as specified by the Customers.

Product use:

As for hop extract. If packaged in polyethylene containers, these may be warmed to 30 - 40° C prior to use and the IKE is then treated as a liquid. Generally, the viscosity of IKE is lower than that of the parent extract. IKE can be used for up to 100% of the kettle bittering requirements. Utilisations achieved with IKE will usually be 50%-70% higher than those obtained with either Type 90 pellets, or conventional hop extract.

Storage:

IKE is a stable product when stored in sealed containers at ambient temperatures or lower. Partly used containers of IKE should be consumed as quickly as is practicable.

Safety:

No known health hazard in normal use. Non toxic in normal use. If material comes into contact with skin, wash off with soap and water. In the case of eye contamination, irrigate with plenty of water. If symptoms persist, seek further medical attention as necessary. Spilled material should be scooped up and the residue removed with hot water and detergent. Hop extract is combustible.
