How to store and serve a real Geuze

The best place to store Geuze and the other Lambic-style beers, is in a cellar at a temperatures between 10 and 15 degrees Celsius. Slow seasonal changes in temperature are no problem, but avoid excessive heating of the bottles or sharp rises in the temperature. After you buy a traditional Geuze with "fond" (E: sediment), allow the bottles to rest for at least two weeks, befor you drink them
As a traditional Geuze comes in a corked bottle, store them horizontally with the label or chalk line faced upwards. Some bottles have a chalk line drawn on them, near the bottom of the bottle, a white line means Geuze, a red line means "kriek".
By storing the bottles horizontally, you keep the cork wet and prevent shrinking of the cork, which may cause air to come into the bottle and spoil the Geuze. Also the sediment settles down, which consists of the enterobacteria and the yeasts. It causes no harm if you drink this, but an unaccustomed intestine, may react to the strange microorganisms, so it is better to keep it in the bottle, it may also influence the flavor.
Geuze can be stored very long, if you take care of the storage conditions. A Geuze should be stored at least 6 months before it is sold. It will be best if you keep it another 6 months before drinking it. A good Geuze can be kept at least 3 to 5 years and even longer.

When you serve a Geuze, use a wine basket to take your bottle from the cellar and take care not to disturb the sediment. Serve at a temperature of about 12 degrees Celsius. Chose the right glass for you beer and take care that the glass is clean.
Use a corkscrew to open the bottle. It is always safe to open the bottle over a sink or a tray, as Geuze may gush if you open the bottle, due to carbon dioxide production. Keep your glasses ready and pour the Geuze in the tilted glass at first, bringing the glass upright as it fills, taking care to keep the sediment in the bottle. The foam that forms on the beer does not stay long.
Take your time to study the color of the beer (amber to golden) and to discover its unique aroma (fruity, horsy, mousy, leather, woody, acidity, ...), its clarity and the carbon dioxide pearling up the glas.
When you taste a Geuze, feel it build up the taste. A dry, sour (lactic acid) and astringent sensation may surprise you when you first drink a traditional, unsweetened, Geuze. A Geuze should show no bitterness.
