Reverse Osmosis in Action

Approximately half of the solids in milk are converted to cheese; the remaining solids, and virtually all of the liquid are drained from the cheese curd as whey. At Golden Cheese, valuable components are extracted from the whey stream in two separate processes.

Whey from the cheese vats is clarified and pasteurized before being sent to the whey protein concentrate (WPC) plant. There the whey is ultrafiltrated to extract high grade protein, which is then spray dried and packed off as a cream colored powder.
