Meze & Salads A proper Turkish meal consists of a long procession of dishes
starting with meze (hors d'oeuvres which can include almost anything. You
can easily make an entire meal of meze. Often you'll be brought a tray from
which you can choose what you want. Salads are primarily served as part
of the meze, although simple salads are often served as side dishes to the
