Mandelbrot 1

  • 3 eggs, well beaten
  • 1 c. oil
  • 3 c. flour, sifted
  • 1 c. sugar
  • 1 t. vanilla extract
  • 1 t. baking powder
  • 1 c. ground or finely chopped almonds
Beat together eggs and sugar until fluffy. Stir in remaining ingredients. Form into 3-4 long rolls each about 2 inches wide. Place on a lightly greased cookie sheet 2 inches apart. Bake in a preheated 350 degrees oven for 30 minutes or until golden. Remove from oven. Cut while warm into diagonal slices about 1 inch thick.
Yields about 36 pieces.
Variation:
To toast mandelbrot, turn slices on their sides and sprinkle with a mixture or 3 tablespoons sugar and 1/2 teaspoon cinnamon. Lower heat to 300 degrees and return to oven for and additional 15 minutes or until lightly toasted.
