Peach-Banana Whip

INGREDIENTS
Amount      Item


1 c.            sugar
1 1/2 c.        water
3               large ripe peaches
1 T.            unflavored gelatin
1/4 c.          cold water
1/4 c.          lemon juice
                pinch salt
1               large ripe banana
1/2 c.          whipping cream


Combine sugar,water in med saucepan.Bring to boil,boil 5 min.Peel peaches, chop coarsely.Add to boiling syrup.Bring back to boil,turn down heat, simmer 5 min.Drain,measuring out 1 1/2 c. of liquid.Return this liquid to saucepan,bring to boil.Cool peach pieces.Add gelatin to cold water,let stand 5 min.Add to boiling peach liquid,stir til dissolved.Stir in lemon juice & salt.Chill by setting in ice water til beginning to thicken.Stir often.Mash banana with fork,stir into gelatin mix.Fold in peaches.Chill again for few mins til mix begins to mound when dropped from a spoon.Whip cream,fold in.Spoon into sherbet glasses,chill til set.
