4 bananas(not to ripe)peel,1"slices
2 T. brown sugar
2 T. cognac
2 T. marg
2 T. granulated sugar
2 T. Tia Maria
juice of 1 lemon
juice of 2 oranges
rind of 1 lemon,thinly sliced
whip cream to taste
dash cinnamon

Place bananas,brown sugar,cognac,lemon juice in bowl;marinadte 15 min. Heat marg,granulated sugar together.Cook til mix caramelizes.When mix is golden brown,pour in orange juice,mix very well.Cook 2-3 min over med heat;stir constantly.Add bananas along with marinade to orange mix. Mix in lemon rind;cook 1 min.Pour in Tia Maria,flambe.Cook 1 min over high heat.Garnish with whipped cream,cinnamon. Makes 4 servings |
