Coffee Ice Cream:Rum Butter Sauce

INGREDIENTS
Amount      Item


2 c.            good-quality coffee ice cream
Sauce:          
1 c.            sugar
1/4 c.          water
3/4 c.          whipping cream
2 T.            unsalted butter
1 t.            pure vanilla
2 T.            dark rum



Sauce:In heavy saucepan,combine sugar,water;bring to boil over med heat,stir occasionally;cook without stirring,watch closely til turns rich golden brown Have ready small bowl of cold water & pastry brush,during cooking,brush down any sugar crystals from sides of saucepan with cold water.Remove from heat, carefully stir in cream (mix tends to bubble up) Cook 1-2 min til sauce is very smooth.Remove from heat,stir in butter,vanilla,rum.To serve,scoop ice cream into dessert bowls,pour few spoonfuls of sauce over each serving.
