Apple-Almond Pastry

INGREDIENTS

preheat oven to 375.

2               thawed frozen puff pastry sheets
1               large egg
1/2 - 200 g     tube or can almond paste
2 t.            vanilla extract
3               med Golden Del apples,peel,thinly sliced
2 t.            flour
2 t.            sugar


Thaw puff pastry.Beat egg.Remove 1 T. egg to cup;mix in 1 T.water;set aside. To egg in bowl,add almond paste,vanilla;use fork to break up almond paste, blend mix.In large bowl,toss apple slices with flour.Unfold 1 pastry sheet place on lightly floured large cookie sheet.With floured rolling pin,roll pastry to about 13"sq.Invert 11"round bowl onto pastry,lightly pressing to make 11"circle.With sharp knife,trim pastry,leaving 1 1/2"border around circle to make 1/2"pastry round;discard trimmings.With small spatula,spread almond mix to cover 11"round.Arrange apple slices on top of almond mix. Unfold second pastry sheet onto lightly floured surface.Roll,mark,trim pastry.With pastry brush,brush some egg mix in cup on pastry border around apple mix.Place second pastry round on top of apple mix,press all around edges to seal.With tip of knife cut 1/2"triangles into edge of pastry,about 2"apart,discarding triangles.Score top of crust with curved lines,starting at center working toward edge,be careful not to cut crust all way through. Brush crust with remaining egg mix in cup,sprinkle with sugar.Bake pastry 25-30 min.Cool pastry on rack at least 30 min before serving.
