Black Russian Mini Souffles

INGREDIENTS

3 sq            semisweet chocolate
1 env           unflavored gelatin
1/2 c.          sugar
2               eggs,separated
1 c.            milk
3 T.            coffee liqueur
2 T.            vodka
1 c.            whipping cream

With vegetable peeler,make chocolate curls,shavings from 1 sq chocolate;reserve for garnish.In med saucepan,mix unflavored gelatin with 1/4 c.sugar;blend in egg yolks beaten with milk.Let stand 1 min.Stir over low heat til gelatin is completely dissolved 5 min.Add remaining 2 sq chocolate, continue cooking,stir constantly til chocolate melted.With whisk or mixer, beat mix til chocolate is blended.Stir in liqueur & vodka.Pour into large bowl & chill,stir occasionally til mix mounds slightly when dropped from spoon,40 min.In large bowl,beat egg whites til soft peaks form;gradually add remaining 1/4 c. sugar;beat til stiff.Fold into gelatin mix.Fold 1 c. whipped cream into gelatin mix.Spoon into 6 (5 oz) wine glasses each with 1 1/2" collar;chill til set,2 hrs.Remove collars,then gently pat reserved chocolate shavings onto sides.Top with remaining whipped cream,reserved chocolate curls.

Collars:Cut 6 (3x6") strips of wax paper.Fold each in half lengthwise so that each strip measures 1 1/2x6".Wrap 1 strip around each of 6 wine glasses;secure with tape.
