Cold Strawberry Souffle

INGREDIENTS

1 pkg           frozen strawberries,thawed
1 env           unflavored gelatin
1/4 c.          cold water
                dash salt
1 T.            fresh lemon juice
1 t.            rum extract
1/2 c.          sugar
1/2 c.          heavy cream
                colored sprinkles

Mash berries finely with fork.Soften gelatin in cold water.Beat egg yolks slightly.Mix with salt,juice,extract in top double boiler.Cover with hot water,stirring til slightly thick.Add gelatin.Mix well,remove from heat. When cooled slightly,add berries,mix well.Beat egg whites til stiff. Gradually add sugar,beat til mix holds a peak.Whip cream til stiff.Fold in whites,cream to strawberry mix,combining carefully til well blended. Rub little oil over surface of 8" souffle dish or straight sided casserole. Carefully pour in mix.Sprinkle with colored sprinkles.Chill 2 hrs.Do not unmold,serve in same dish.
