I love buying food, then cooking recipes from all over the world, having read my paper or a good book whilst sipping a fine whisky or bourbon, and having a great dinner with good friends, accompanied by fines wines and ending with strong dark coffee. Chicken with Potato (Djaj bi-batata)

I love Lebanese food, and here is my variation of a simple but excellent dish, (varied, because that's all I had in the fridge !), but the end result is delicious !!! Taken from Nadeh Saleh's excellent Fragrance of the Earth, Lebanese Home Cooking - Saqi Books ISBN 0 86356 056 3 - Go out and buy it !!

800g, skinless chicken breasts (I used stewing pork, cut into small cubes), 2 unpeeled potatoes cutinto iinch pieces (I used about 15 small, new potatoes), 1 170g onion (I used about 6 spring onions and two leeks), 3 leeks peeled & crushed (I cut them into thin slices), Salt & black pepper to taste, 1/2 tsp cinnamon, 1/2 tsp allspice (I used mixed spice), 3-4 tbs lemon juice2-3 tbs extra virgin olive oil and 125ml water

Combine the chicken, potatoes, onions, garlic, salt, cinammon, black pepper, allspice, lemon juice, oil and water in a baking dish: mix thoroughly toblend well. marinate for 2 hours or more in a cool place (I did not as i was impatient, I am sure it would have tasted even better if I had). Then allow to reach room temperature before baking.Pre-heat oven to 200deg C and bake for 30 minutes then reduce oven temperature to 190 and bake for further 50 minutes (In my fan oven 25 and 35 minute sufficed) turn from time to time. Enjoy !! :-)
